Chinese pickle comes from a ferment culture. Pickle jar is an important tool to made pickle for thousands of years. In the absence of oxygen it can make pickle accelerated the ferment and produce lots of lactic acid. Generally, it costs 5 days to pickle the pickle and then re-new with fresh vegatable. The reformed Jar has a U-shaped structure, it keep the jar be re-newed by getting-out from one side and putting-in on other side, 5 days shorten.
