The An Bar cooking knife is a project developed with focus on Design for Manufacture and Assembly, as well as Material Analysis. The objective is to design a cooking knife in the most simple, elegant way, with the resources available to a small manufacturer, in this case the author himself.
The blade is made of 5160 carbon steel, commonly used to manufacture springs and suspension bars. Carbon steel is easier to sharpen and holds the edge for longer than stainless steel, it is widely available and easy to apply heat treatments to. In order to protect the knife against rust, a surface treatment is used in the surface of the blade.
