Steaming is an integral part of Chinese cooking. A modern version of the traditional steamer, the fireproof ceramic pot is more stable and less sensitive to changes in temperature, making it rather unlikely to crack or break during cooking. It is suitable for gas stoves, ovens and microwaves. Terracotta is known for its good liquid absorbing properties. Used to replace traditional bamboo baskets, it prevents the food from becoming too soggy during steaming.
