Today, we look for pleasure and excitement in food as well as safety and reliability as we struggle between interests in multicultural food culture and awareness in environmental- and health issues. The cookbook "Guide to the Foreign Japanese Kitchen" reflects on this dilemma, and introduces Japanese traditional home-cooking in a suitable way for todays Swedish environment/lifestyle. Many "exotic" ingredients are substituted by locally available ingredients, and meal composition, cooking techniques, presentation, and tableware are also modified for everyday life in the foreign environment.
